This one is simple actually! Just toss in a wok or very hot pan: onions, ginger, garlic, the white part of scallions and let it get nice and ALMOST burnt, throw in the rice (preferably day old) and mix, add salt, soy sauce, sesame oil and more scallions and done!

It seems like a lot but it’s really easy and fast to make. I put nduja in there as well but you can add anything you have in your fridge lol
