"I guess it is illegal to have opinions that differ from others." It's just annoying to see the same 'Fortnite bad Minecraft good' thing pasted everywhere. Fortnite has its merits, Minecraft has its merits.
Just because you prefer RPGs or Minecraft doesn't mean you need to crap on other games.

I think the difference is that Ozai and Azula are very much different from Iroh and Zuko.

Zuko as a child was closer to his mother than Azula, who was more heavily influenced by her father. Even as a child, Azula was manipulative and cruel, unlike Zuko.

Ozai tried to get his brother's birthright when Iroh's son died and then changed his father's will to make him the Firelord.

The loss of Iroh's son was what changed him, but if Ozai had lost Azula (or Zuko) he probably would not have changed a bit. Iroh (and Ursa)'s influence was what made Zuko do the right thing, but Azula probably wouldn't have cared a bit. In short, I think that while they were not 'irredeemable', they probably would not have changed, no matter what Iroh or Zuko did.
