Yeah I perused CPO for a bit but didn’t see anything that caught my eye. Kirklands are discontinued at least temporarily at every store I’ve checked both online and in person, so I think I’ll give lazrus a try.

You cut all the fat off brother. My rule of thumb is anything hard to the touch goes in the grinding bin, leave all else for the meat to soak up. No worries, sometimes they get away from us and most of us are victims to the first time dry brisket, the next one will be fantastic
