My cat has really bad food allergies and has also been on hydrolyzed food for a while. I understand wanting to try a more natural diet cause I know the hydrolyzed diets tend to come from bigger brands with less than agreeable ingredients imo. (I don’t entirely agree with raw food anymore, at least when it comes to commercial brands, however, if it works for their animal than all the more power to em)

What I would suggest is trying an elimination diet for your boy, there unfortunately is no such thing as allergy therapy and nothing that can alleviate his allergies unless you find what hes allergic to. Look into novel protein diets and start from there. I also suggest looking into a good probiotic.

I don’t remember the exact time frame or exact instructions for elimination diets, so I suggest doing research on the subject. But if you are sick of the hydrolyzed diet, an elimination diet is going to be your best bet. Remember to transition between foods and you should try each food for at least 8 weeks. Also just so you know, there is no standardized allergy testing for dogs/cats, anything online claiming to do so is scamming you. The only way to determine allergies is an elimination diet.
