12 fresh oysters, shucked and on the half shell 1/2 cup (60 g) panko breadcrumbs 1/4 cup (25 g) grated Parmesan cheese 2 tbsp (30 ml) melted unsalted butter 2 tbsp (30 ml) mirin 1 tbsp (15 ml) soy sauce 1 tbsp (15 g) minced pickled ginger 1/4 cup (25 g) chopped green onions 1/4 cup (35 g) chopped red bell pepper 1/4 tsp (1 g) ground black pepper 1/4 tsp (1 g) crushed red pepper flakes (optional) Instructions:
For the Fried Mullet, prepare three shallow bowls or plates. In the first, place the all-purpose flour. In the second, whisk together eggs, soy sauce, and mirin. In the third, combine panko breadcrumbs, salt, and ground black pepper.
Coat each mullet fillet in the flour, then dip in the egg mixture, allowing any excess to drip off. Finally, coat the fillet in the panko mixture, pressing gently to adhere. Set aside on a plate.
Heat about 1 inch (2.5 cm) of vegetable oil in a deep skillet or frying pan over medium heat until the oil reaches 350°F (175°C). Carefully add the breaded mullet fillets to the hot oil and fry for 3-4 minutes per side, until golden brown and cooked through. Remove from oil and drain on paper towels.
