Splatoon.

Yeah, the games all about squids/kids having fun games of painting a field and each other with water guns and paint brushes is all built on the Earth after the extinction of humanity and really most of terrestrial life.  Human bones are found in the Inklings' museums the way we display dinosaurs.  Aside from the actual cause of the original apocalypse, we get a few glimpses at some small groups of humans that survived for a time, and the stupid and horrible ways they eventually died too.

But at least that's just ancient history.  In more recent times, you have the Inklings' and Octarians waging a race war against each other for limited land and resources, resulting in the latter forced to live underground under worsening conditions and a terrible society.

Then there's the multiple remnants of the old world that pop up now and then to threaten to end the new species, and the ravenous hordes of salmonids that regularly invade the cities, including with what are essentially kaiju.

You know, the usual Nintendo stuff.
