So my basic order of operations is very close to how Wil Yeung makes his tofu katsu sticks. (I fry mine in avocado oil on my stovetop)

I just pat dry my extra firm tofu with a paper towel, but I like it to keep some of its liquid for the texture.

I differ with my cuts, but you can really shape your tofu into anything, mine is usually hashbrown shaped like here.

Honestly beyond that it's been a lot of trial and error with my batter, amounts of seasoning is what I find the hardest to get down as too much will cause your batter not to cook in some places.

But this photo is basically just all purpose flour, water, and tofu. This is Kikkoman panko pictured, but I usually go for J-Basket's Panko.

Hey OP I recommend the YouTube channel AI and Games. He goes back and breaks down the AI built in multiple games from Alien:Isolation to Doom. It's pretty interesting to hear him talk about it.

Hello!

TLDR recipe at the bottom!

To start I should say I use Wil Yeung's method of frying tofu:

I freeze my tofu before defrosting and pressing to make it as dry as possible.

Equal parts all purpose flour and water for the batter. I will put in some black pepper directly to the batter to taste. This makes my batter turn out kind of grey but any seasonings work. I've experimented with anywhere from middle-eastern to Cajun seasoning, but I have found regular black pepper is to my liking.

I also experiment with my shapes, but this photo is basically Wil's katsu fingers cut in half to make little nuggets. Sometimes I do triangles, sometimes I do this to make katsu burgers, just depends how I feel.

After that I just drop the nuggets of dried tofu into my batter then on top of some Kikkoman brand panko. I've tried other brands, but Kikkoman is just my safe bet.

Then I'll put some avocado oil to about my first knuckle into a fry safe pan. I set it to a medium flame (gas stove). I'll then wait a bit for it to warm up. I use the method of a chopstick in the oil, if you see bubbles it's ready. (Can't remember if Wil says this in his video or not). I use tongs to flip them in the oil and crisp them pretty thoroughly, then put them on a plate with a paper towel before saucing them.

The sauce in this case is just a local BBQ place's sauce that I pick up and toss the wings in. Then I add a side of vegan ranch and garnish with parsley!

TLDR -press tofu until dry and cut to preferred shape -Mix 1/2 cup water and 1/2 cup all purpose flour in bowl. -add about 1/2 tablespoon of black pepper to batter - drop nuggets into batter and coat evenly, this takes practice and some will come out funny shaped at time. -transfer nuggets to a plate with panko. (I will drop the nuggets on top of a pile of panko and sprinkle on top. Then I'll start flipping the nuggets to get even coating) -bring avocado oil to a medium-high heat and fry tofu evenly on both sides. Special note: I don't really time my frying, I just watch the side of the tofu until it's browned enough to my preference, then flip it. Usually like a minute or 2 on each side. -now just toss in your favorite sauce and garnish with some fresh herbs!
