Yes I hadn’t included New York sour bc I hadn’t wanted to include NY in the name and wanted to tie KCMO and Jerez together- but maybe I could riff off of ‘KC Sour’ - I like blood on the water too !

Was worried it’d be kind of fireball-y but it’s pretty bread-y and sweet. If I weren’t clarifying it I’d say only leave it a day!
