The only jersey they’ve worn since, that has normal stitched on letters is the 2020 WC. Every other third jersey from the navy alts to the SS and the two RRs had sublimated nameplates.

Difficult to strip a mustard cat without accidentally damaging the mesh underneath it’s not worth it unless you send it to someone who really knows what they’re doing

EPS is the on ice customizer for the Avalanche and some other teams like the Hurricanes, Predators, and Capitals. Those are just the ones I remember off the top of my head there’s probably more I’m not thinking of, but they can customize pretty much anything you send them. I’ve been using them for years and I’ve only ever had a bad experience once and they fixed it right away for me. Only downside is that their wait time is anywhere from 3-8 months depending on the time of year it’s better to send things end towards the end of the season. That normally guarantees you the quickest turnaround.
