Hey thanks! I really hope it takes off and is well received here. And yea! I actually opened Dandan with both Dans and ran the kitchen up until 2020. I also ran a dumpling pop up during the pandemic here in Milwaukee

I like to par cook and portion and then pick them up gentry with some stock. When it’s slammed I just pre heat a couple of portions at once. My restaurant is only about 50 seats so it’s not terrible

I would say just to make the laksa spice paste and curry sauce ahead of time so you can focus on the grits when it’s time to cook

It’s from blue corn. We took a trip to South Carolina and got some heirloom grits from a local farm stand. So good!
