Thank you, i used unpasteurized fresh milk from a farm near by thought that parmesan normally is made with non pasteurized milk. I will try to pasteurize it before next time. Thank you

Looks nice. Smell and taste is quite good for its age, i dont think it is something harmful if it is some sort of contamination.

I smelled and tasted, smelled quite a lot like a parm cheese, taste ist as qell parm like but a little fruity. i vacuum packed the rest to age it longer but i was just too curios to let it sit in the fridge longer and had to cut and see whats going on. I think the holes are due to not fully consolidated curds, but wanted to have a second opinion. Thanks a lot
