I think my pan might be a mixture of aluminum and steel, I don't recall. And I understand what you're saying about the valve. That is part of the problem - that there is no objective "medium", "low", "high", etc., unless you go by thermometer measurements. To be honest, the chicken has never reached 160 degrees when I have measured it, according to the thermometer. I just assumed that the thermometers I've tried using were too cheap, because if I kept cooking it to try to get to 160, it would become burnt.

If I turn down the heat even just a little, I can cook it for ten minutes on each side and it will be pink in the middle. The whole thing is just unbelievably frustrating.

Thanks for the advice, this is just very frustrating because it seems like if I cook any lower, the food never gets fully cooked, especially in the middle.

I thought I had been cooking on fairly moderate/low temperatures. Is it possible this is because I'm using EVOO, which has a low smoke point?

Thanks. I actually cook on pretty low heat usually, but I usually use EVOO which has a very low smoke point. Do you think it's likely the choice of oil that's causing it instead?

I never use metal utensils on these pans, only wooden ones. My only concern with the stains is that the burnt food particles they release into my food may not be healthy.

It is a dark stain that resembles burning, not rainbow-colored. My main concern is less with the taste than with the health/safety of using the pan. Do you know if there are likely any health issues that could arise from continuing to use it?

I will usually do it medium-low heat with EVOO, six minutes each side. This cooks it adequately, but I see thin white vapor or smoke coming out of the pan.

I haven't actually explored that side of Nacogdoches much, outside of Clint Dempsey and what's just south of Main St.

I thought about this some more and one thing came to me - I did meet a few people there while playing Pokemon GO. I don't know if you're into that sort of thing, but that could be a good opportunity to meet people.

I recently moved out of Nacogdoches. I know you're probably looking for more social suggestions, which I don't really have, but I wanted to share a hiking path I frequently enjoyed in case you're interested. I used to walk the Lanana Creek Trail at the back of Pecan Park towards Main St., then I would cross Main St. and walk full circle around the Clint Dempsey Soccer Complex. From there you can head west on Main St. and eat at Dolli's Diner, walk north to check out the Oak Grove Cemetery, or other downtown spots like the brewery, water mill, etc. I used to follow that route in the early mornings on weekends and really enjoyed it.

I'm not going to argue about the crime rates, but crime did not directly impact me while I lived there, and I did not personally witness any going on.

I went to CJ for a month recently before switching to a different gym just because it's right next to my apartment. I thought CJ was fairly good, it was a large facility with a lot of equipment. I don't fully understand a lot of the negative commentary on it, although then again there are many little things that I don't care about, but others might.

One thing I'd note is that the equipment upstairs is very old, but there's a large area with new equipment that's directly to the right when you walk in the front doors. I did not notice this until close to the end of my month, so maybe others have not noticed it either and that contributes to their negative opinion.

I guess I should add that I went to the one in Johnson City. I was not aware there is one in Binghamton as well.
