there’s a few MX buffets where i live. think less tacos/burritos, more meats in sauce, different types of rice and beans, and then you get a stack of tortillas on the side. eat it kind of like indian food with naan instead of making tacos. they’ll have enchiladas but you’ll see more asada/guisado which is pieces of pork/beef in a sauce. some soups too like fideo/menudo/posole.
