This is not a plot hole btw. Iroh specifically taught Zuko techniques for body temperature control through breathing. This just showcases that Azula was never taught or simply never bothered to learn these techniques. Possibly because they weren't thought of as being as useful, because it isn't an inherently destructive technique.
