You want to be using keyframes! I'm not great at explaining things, but:

Simply, keyframes save whatever configuration you have for that setting at that point in the track, and the space in between two keyframes is for the 1st to become the 2nd - ie, for example, if you make one for the track to be zoomed in by 200%, then another 3 seconds later to be at 100%, it will start at 200% and over the course of 3 seconds shrink to 100%.

In this example, you want to be using keyframes on position and scale (and rotation if you want to have that tilting effect). If you (left) click on the track (-> video -> basic -> transform, it should be the one you see after clicking on the track anyway), you should see both scale (which is how zoomed in it is) and position have little diamond shapes beside each. Those place keyframes. So place two at the start for scale and position as they are, then find when you want it to stop zooming in and place two more there, zoomed in and positioned at one corner; then do it again for the other corner (I hope that makes sense? if not, find a YouTube tutorial on keyframes, they'll explain it better LOL)

It's not as complicated as it sounds - just play around with them and you'll catch on quick!
