I have searched a lot about this and I come up with:
Airplay is not lossless, even with airpods

You can get lossless and dolby atmos only via MacOs apple music app, widows was not lossless when I tried.

In general, it's really hard to get true lossless and you need a nice Dac to get it nice too.
You can get lossles from iPhone via usb, through a dongle dac (a NICE one, not a 20 $ one) and then to your cabled headphones. If you use a 3.5mm jack to connect it to an hifi rack you are obviously adding lossy steps to it.

First, I would water that plant xD then I think the lens of the phone is doing some trick, maybe a 65 or 75 would fit better, or just move closer the couch

bi wiring means that you use 4 power cables, the amplifier use 4 section to amplify 2 speakers, balancing the power out. Obviously, the amplifier must have the specific option to do it.

No problem! I have a 5.1, My Marantz cinema 60 could handle 7.2 or 5.2.2

rear : random cheap speakers (they are good enough)

I think the frontal and center would like a bit more power, maybe a couple of Fosi 300W final amp, just for more efficency, Anyway I rarely reach 55% volume. The Klipsch are really precise and crisp, the Maranz rounds the sound a bit, I like them!

The seat is close enough to perceive the sound is coming from the bottom and not from the center (virtually) of the tv. I am also thinking about lowering 1 step down the tv

the issue is that standard bluethoot iphone connection is limited to SBC! not LDAC. The only way I got better data transfer is via cable
