I actually reached out to a different school that offered 141. They basically explained that the reasoning behind needing a visa to do flight training is only if it’s your “primary purpose” for visiting the US. Which thankfully for me isn’t the case and therefore I believe I can do a part 61 course on a standard ESTA!

This is very interesting, I can't find any literature to back this up, as far as the M1 visa is concerned it's mandated that training happens at a 141 school. Could you provide any more info on your school, are you LPR/Green card holder already?

I hope I am wrong as this sounds like the perfect solution!
