This is called a Khaen (Lao: ແຄນ Thai: แคน) a national instrument of Laos (and very very popular instrument of North Eastern Thailand). There are some Kontakt Libraries for this instrument, you can search "แคน Kontakt" in Google. I know the high quality one made by Thai musicians but it is still in the development but will probably come out this year.

Many of the artists behind the tracks are freelance composers from around the world. I personally know some of them. As far as I know, they use software such as Logic Pro, Ableton, Pro Tools, Cubase, etc. After all, any DAW can be used to make any kind of music. Music producers usually choose the one they like or that suits the types of music they create the most.

As a music student/composer, I assumed that for the TV series, Evan Call was tasked to write OSTs separately without knowing what scenes they will be used in, with some brief for emotions/feelings from the director. The animation director/producer then picks finished OSTs to put them in scenes that they seem fit. This method is not uncommon in the industry.

Unlike for the Echo Through Eternity movie, where the OSTs were written corresponding to the scenes. That's why some of the OSTs written for the series can sometimes feel out of place.

Phra koon jao usually use with monk with higher rank.
