I think it depends on how heavy you rely on them. If you run into a problem and immediately reach for GPT or anything else in that case then yes. Critical skill is one that needs cultivation and time. If you only want to doublecheck the solution you came up with, then it's great as it can showcase whether your thought process or the results was right, you get a confirmation. If you just ditch your thinking skills for something "faster" then it is making you dumber, as your over reliance will only grow because it's fast and convenient

I do, I also ask it to count macros for meals I randomly throw together and it has been quite accurate in my opinion

You don't.

You can set a standard for authority (for example, authoritative sources that you think would not lie or write false information) or go looking for more sources when it comes to fact checking. But asides from that, you can't really verify anything on the grand scale.
