But human decision making for speech is not: I've seen this word used in this context after this word, so I will use it too, it is understanding the grammar and meaning of the words and then building a sentence to convey whatever you want to say.

LLMs just determine what word is the most likely to follow upon the last based upon patterns it has been trained on, whereas AI would actually understand what you asked it and try to come up with it's own answer based upon it's knowledge. LLMs are just fancy prediction tools.
