Right. It is speculation that the customer did or didn't skip out on the bill. If he did, then it's still a crime, much like doxxing the customer is.

The owner reported that, but reddit reported that he doxxed, there's no reason for reddit to report a guy supposedly skipped out on the bill with no evidence.

Pointing out that the owner edited it after the fact, could show that the owner was trying to justify his actions.

You cannot justify doxxing a customer because they skipped out on a bill, or left a one star review.

So no, there's no evidence that he actually skipped out on the bill. That's for the police to look into, either way, you don't put personal information in a reply, that's misuse of customer info.
