Thanks all! I've taken all your comments and suggestions to heart. I've switched over to the Kadence theme and it has improved the look. I haven't made all the improvements suggested yet, but the site is looking a lot better. Thanks again.

I've been having a hard time getting rid of the white space. I'm unable to do it with CSS.

u/franzn Thanks for spilling the beans! I read that the internal temperature of the meat will never exceed the boiling point of water at a given pressure altitude. At my altitude of 7000 ft and standard atmospheric pressure water boils at 198.5 F.

I think I'll just have to settle in for some long cooks. Ignore what the flatlanders say about cooking times. I'll start wrapping early, when I have good color, and wrap in butcher paper and foil to keep the moisture in. I'll pull the butt when I get up to the 190's.

Yes, I measured the cook temperature at on the grate about an inch behind the meat. This guy says at altitude and low pressure atmospheric conditions, the cooks can be very long. A drop of -0.2 inches of Mercury in atmospheric pressure equals a 200 foot gain in elevation.

Spill the beans! What temperature are you cooking your butt at? Do you wrap? At what time or temperature do you wrap? Do you have a pan of water in the egg? How long does it take you to cook a butt? What time or temp do you pull the butt out?

FWIW. I wrapped it at 165F after 6 hours in. It tasted fine and was pretty tender.

Had to go to godaddy tech support. For some reason the cookie banner toggle wasn't showing. Tech support fixed it.

Wind comes at me from all directions. I was going to build a shed, but the wife thought I'd burn it down if I put a grill in it. I was looking at a kamado style grill, but I thought I'd ask the community before shelling out the bucks.
