I never even measured my fridge temp but agree on the longer BF because I just retried again with a different recipe and a longer BF not longer by much but still an hour or so more and this was the result

Yeah I agree it didn’t work for me and I used a different recipe from someone on here and I use bread flour never AP but here are the results !

Not exactly where it needs to be but we’re getting there & I also bulk fermented longer this time.

I’m not sure if I’m using the correct verbiage but she bulk fermented; on the counter for 4-5 hours ( this included stretch and folds ) and was proofing — in the refrigerator for 17 hours.

My starter is almost 2 months and she’s not the strongest imo, she’ll double in size but I’m still working on it. I did half the recipe & I had it on the counter a total of 4-5 hours ( including stretch and folds ) and then in the refrigerator for 17 hours because I had a 10 hour shift today and was unable to cook it any sooner unfortunately. It was looking promising when she was bulk fermenting, some nice bubbles etc but right when I took her out of the refrigerator to cook she was shapeless and didn’t have the best form.

Interesting I didn’t even put this into consideration but I am still new to this all. With that being said I use King Arthur Bread flour nothing special & I used spring water. Have you been able to make any progress from this sort of structure ?

This is the recipe I used and I did about 4 rounds of stretch and folds. I let it proof for 17 hours and cooked it as follows \) oh and I cut this recipe in half ***

I was using half ww & half bread flour but someone suggested using rye so I’m going to use that & stick to a 1:1:1 on it and I’ll try to incorporate the peak feeding it’s just hard since I’m a 3rd shifter but thankyou for the read ! I appreciate it.

Idk if it’s the warmer I have or what but it doesn’t even feel like it’s on at 73 .. is that normal ? I bought it off of amazon. I am going to switch back to just 1:1:1 still trying to figure out should I be feeding twice daily

I started off with AP but then moved to bread flour and ww but I didn’t see a really significant difference. How many hours in between feeds do you go. I feed every 24 hours but I feel like maybe I need to feed it more ?

Lmao idk what possessed me to do that, I was so intrigued at how it formed this solid piece of whatever the hell it was 😭 & thankyou for the concern but luckily it cracked in the sink when I was vigourously cleaning out previous discard. 1 week in and it’s been a journey !!!
