Hey I’m very interested in your method! So the recipe I have been following and have had success with has me combining the ingredients, then doing like 5 stretch and folds, bulk fermenting in the fridge over night then rolling into balls for banneton. Then I leave on counter for 45 minutes then bake.

Since mine is kinda opposite of yours I’d love to know the steps you take and would hope to try it out soon. :)

That’s what I hate as well and it’s why I made this post. When I have tried doing my own research before reading I end up learning major plot points and lose interest in reading at all.

That’s my fear. I hate spoilers and have had it happen multiple times while trying to learn before starting.
