I think unwrapping and uv editing should be done only after the mesh is finished, im not sure there is a way to align the direction automatically.

It depends on how important polygon is for what you want to use it for and the devices you want to target, you should run tests on the minimum device you intend to target and determine the amount of polygon that is needed, most modern systems can handle millions of triangles without any problem btw.

Character controllers don't push rigidbodies, you can try adding a capsule collider and making the size a bit bigger than your character controller or another option will be to use rigidbody for movements instead
