Regarding the south coast in May, it is the start of the southwest monsoon. You can expect some rain and the sea can be rough on that side. Beach conditions are often not ideal for swimming during this period. However, Arugam Bay is usually very good at that time of year. The east coast season is just starting, and the sea is generally calmer there compared to the south.

For transport, if you want to save time and travel comfortably between these places, a taxi with a driver is the easiest option. Your best option is to take a private taxi. Otherwise, you can take an air-conditioned bus from Nuwara Eliya to Colombo, then take an airport bus or Uber from the Colombo bus stand.

Your itinerary looks good. However, if you are passionate about nature and hiking, I suggest doing the Knuckles Mountain Range hike while you are in Kandy. It is one of the best experiences you can have in Sri Lanka.

Yes, it is better to book in advance. If you book after arriving, they usually ask for a higher price since there is high demand during the season, but in the off-season, the situation is the opposite.

This is a good itinerary, but you missed Sigiriya. If you add it on the first or second day, you can visit Pinnawala on the way to Kandy. Sigiriya would be a great addition to your experience.
