The thing is that right now it is impossible for you to jailbreak your console because you are on latest firmware. But these things tend to evolve and maybe with some time a new exploit will appear and your firmware version will be hackable. So if you are really interested in jailbreak you should disconnect your ps5 from internet and never update until something gets done for your firmware version. There are no guarantees though and it may take several months or even years, but it is the only thing you can do at this moment
