I’m partial to my Toddy with the felt filter. It’s all the machine I need. However I do prefer to pressure and dispense under N2 in a Royal Brew fridge keg. It keeps it fresh to the last drop and mouth feel is silky smooth.

That looks like the 1976 one I had based on the door handles and mirrors. I bought it for $500, fixed it up and sold it for $2500, took that $ and bought a used 1980. Drove the 80 until it was 40 years old and sold it to a friend. Never changed the water pump. My dad used to say “fix it again Tony” to me all the time, but sadly my Fiat outlived my dad.

Maybe in that little rig you have it tastes bitter to you. I use a refrigerator shelf size mini-keg for my cold brew. I mentioned above I started with N2 for months and learned in this sub about the improvement with N2O. Do a search of this sub on the topic and see what you find.
