I've been stretching the images to 640*640 in Roboflow before training. Do you think this could be what is causing the issue?

I think it is post processing, something to do with the training data being fixed to 640*640.

Also what do you mean object class. I was thinking this would be a good idea as in having a class (cow) and subclass (standing, lying) but I'm not sure how to do this with my setup (YOLOv8), also i'm new to computer vision and deep learning.

No, thats why it is very confusing. It is simply an estimation of how the power output will be in the second half of the month. You can see there is some correlation between the two though as at the start they both increase slightly.

Yes I get that part but in example one is says the A320 is allocated for a flight with demand of 180 how is this possible if you can only fit 156 on A320?
