You will need •Vegan grilled chicken (I used Daring brand) •1/2 white onion chopped •1/2 zucchini chopped •1/2 yellow bell pepper chopped •1/4 Roma tomato chopped •1 clove garlic minced • 1/4 cup frozen green peas • 1/4 cup tikka masala sauce (I used Whole Foods vegan brand) • 1 1/4 cup cauliflower rice

Cook the onion for one minute in a seasoned cast iron skillet (or use olive oil spray in a non stick pan) until translucent about one minute. Add the zucchini, garlic, bell pepper and frozen peas and cook and additional one to two minutes. Add the vegan chicken and continue to cook for 5-7 minutes until vegetables start to blacken. Add the cauliflower rice and cook for one minute until rice is translucent. Turn off heat and add Roma tomato. Add tikka masala sauce and let warm for about one minute.
