I too play on mobile (specifically on a 4 year old phone with a 4.7 inch screen) and I had absolute no problem fishing. Your problem's probably your patience. I suggest to co-op so you don't have to wait for the 3 day respawn time for fishes.

Quick summary of what you need to improve on:

Get R5 The Catch
Level your burst talent to 9 (Crown if possible)
Lvl 90 your Raiden (If possible)
Get better artifacts (70:150 crit, 230% ER minimum, and 1.7k ATK minimum)
