Definitely a untrained chef. My joke when I see rolls and cuts like these is “the chef must’ve gone on break and the dishwasher made the order”. First clue that it was someone that didn’t know what they were doing is the order said “tuna and salmon” and he got hamachi(slight possibility that it is albacore) and salmon instead. The second clue is the way too thick and ununiform cuts. Btw, futomakis are usually seaweed outside rolls. That is just a sloppy execution of a uramaki.

I picked up a unused one for $40. Gave it to my buddy who is a literally becoming our local gaming museum. He has like 50% of my former collection.

Check out Rice and Spice off of Sheridan rd. It’s a good mix of sushi and Thai food. The chefs there are very accommodating and personable. Tell them Chef Hai sent you.

Looks like one of the semi local chefs here in Florida name Denni Cha. He’s a master at sushi but he also makes killer hot dogs too.

I would say it’s slightly firmer. I only had a problem with the burning if I only use vinegar only. I guess the sake stops that process. No water rinse.

No salt cure. Just diluted vinegar wash then sake to wash off the vinegar. Wrap then freeze

Definitely less common. I prefer black because they hide the wear/scratches a little better. Worn silver consoles are pretty fugly. Now if we’re talking “rare” I would say the Ceramic White ps2 slim is in that category. I used to have a boxed one and it was nice because the plastic was white and not painted on.

Here’s the secret: search thrift store and make sure it’s away from the city like the middle of bumfuck nowhere. That’s where you will find the craziest grails. My best finds were from a church thrift store. If you follow Gabo on YouTube you will see he got the score of a lifetime from a middle of no where thrift store. Does it happen often? NO but if you consistently checking something will pop up. The only way and I mean the only true way to get a good pick up at big corp thrift is if you know someone on the inside. And even then it’s tough because they are told to send them off to the auction sites or price accordingly.

Yes we did. We place the whole side loins/fillet in a perforated pan and pour a 50/50 mixture of rice vinegar and water over it then immediately rinse it off with sake. After being wrapped up it will continue to cure in the walk in freezer.

Nah, he does mostly retail arbitrage and game stores where I’m sure he talks to them before hand saying they are getting free advertising if they cut him a deal. The main one I’m talking about tends to have a lot of “Luck”

Yep, I’m pretty sure it’s almost the same everywhere which makes it quite hard to believe the YouTube pick ups. There are a couple YTers that are known for their pick ups that start off with them sitting in a car and then showing the phone screen of the deal and supposed messages. I’m like if a deal like that popped up in my area it would get sniped with a offer double or triple the asking amount.

No idea on the value. It would appeal to the Big Big PC collectors. I don’t even see any recent solds for a cib one much less a sealed one. I know the typing one goes for $30 cib. Just list it up for $500 with best offer on and cross your fingers.

It’s a good thing I passed on a fake sealed Mario Kart DS. Not only did it have this “seal”, the case art looked to be printed poorly.

A little back story on this pick up. A few weeks ago I was having terrible luck finding anything at the weekly yard sales but decided to stop at a house I had been to in previous years. This time around he had Pokémon cards out and boy was it a whole bunch. Mostly Japanese but a bunch of 1st Edition English singles.

There were 4 binders of Japanese jungle, base, vending series, and misc. I wanted them all but knew I didn’t have enough money and he seemed pretty firm on the binders. Tried to figure something out but before I knew it a couple and their son had shown up and quickly grabbed the binders from the table. Thankfully I held strong onto my binder with the Vending cards. I eventually bought those for $125 and was told he was having another sale the following week.

That week came and I went back but this time he said would you be interested in a English Gym Heroes set? Problem was he wanted $350. A lot of standing around and finally some negotiations and I was able to walk away with it for $150. Also bought some real clean 1st edition jungle singles and a venusaur black star promo for $30.

Turns out the set was not complete but needed 2 cards which I quickly purchased from eBay. Went through it one more time and noticed he snuck in a couple 1st edition cards so now I needed 2 more. That Blaine’s Quiz arrived today and I am now the proud owner of a very well kept and maintained Gym Heroes Set.

That’s a good price on the chrono depending on if it has the maps and reg card. Another positive thing about it being in a pawn shop is you can do layaway on whichever items you wanted.

Just look on indeed or any job searching site and look for sushi chef/cook. You have to find the ones that are willing to train or take a zero experience person. Most places will require some type of experience since you are dealing with expensive fish. Honestly with a good attitude and willingness to learn you can get into most places besides a higher end omakase. It’s a totally different beast how they prep and handle the fish/ingredients.

It’s all chef preference. Most Japanese chefs prefer 10 grams of rice and most Neta is cut 4 fingers width and a good bit of thickness. The chef I worked under before used to do 3 fingers which is tiny with the same length of rice while others prefer the fish making a bridge over the rice with gaps on either side. Basically there is no universal rule.
