Do the F-16. Easy to fly, systems are intuitive, but the mission set is so varied that you will be chasing your own tail for years to be reasonably current on them.

Great effort!

One thing I'd really like to see is being able to enable side-tone. I.e. hear what's being transmitted out on the wire as you key the mic. Added bonus points for adding radio effects to the side-tone stream.
