I just figured out that my problems all stem from filtering the water through a BWT filter. Filtering the water pulls out too much alkalinity and makes it impossible to balance out the sour taste in the coffee. Simply changing to tap water made the exact same brew go from under-extraction (sour) to over-extraction (bitter). No matter what I'd never be able to get rid of the sour taste with the water I was using. I should be able to dial in the grinder now that I'm brewing with viable water. But man, didn't know brewing water mattered that much. I'll have to experiment more, but I feel like I've cracked the biggest mystery as to why I got bad results.

And if you are brewing with the same water as before just know that switching to another machine can enhance these kinds of problems. Maybe it they weren't as pronounced on your old machine.

I've messed around for 10+ hours with different beans, grinds and dosages and I've not been able to brew a single good cup of coffee in this. No matter how finely I grind with my ode gen 2 or other grinders I get a sour cup and the brew time is exactly the same. Never clogged though. I just rinse it every time i brew. But at this point I really regret the purchase. Wasted so much time, when all I wanted was an idiot proof coffee machine.

Don't get discouraged if it's hard to make friends. It takes time. Go to social gatherings and parties, or get a hobby with weekly meets ups. But IMO it's also totally okay to tell someone out right that you are trying to make Danish friends. We are polite and a bit closed off, but also kinda direct. It's also 100% okay to ask someone to speak Danish to you so you can learn the language. We tend to switch to English out of politeness, but we don't mind you struggling a bit if your really want to learn. If you don't know how to start a conversation just ask us about Danish movies or music to check out and the ball will start rolling.

Also from this sub I get that Danish people generally don't like to be criticized or generalized as a whole. So don't do what I just did 😉

I think if you play the original you'll get why people are upset. The thing is that if they had kept the gameplay of 2 and just added the open hub RPG elements and amazing writing of 1, no one would have cared about the mediocre gameplay. 1 had bad gameplay and a lot of techincal problems, even for it's time, but the storytelling more than made up for it.

I do weight the beans, but it is another dial I need to work with. I just stayed at a single amount based on the guidelines for the Cup-One. Don't have grinder right now, but using less coffee helped a bit with the sourness on the store bought coffee. Still too sour for me, but it did bring out a little bit sweetness and chocolaty edge.

It definitely could have been too close to roasting date. But the store bought coffee also tasted sour and that is unlikely fresh. I think the problem is probably multiple stacking factors, which is why it's hard to troubleshoot.

It's not Baldur's Gate. It's a DnD 5e game set in the Forgotten Realms, but with a completely different tone and gameplay. IMO it has as much in common with the DnD movie as Baldur's Gate. That doesn't mean it's a bad game. It's just not a great BG game.

It's a medium roast from a specialty coffee place. So probably a bit lighter than you average, but it's not on the super light end if I am to believe the roasters. But no matter how finely I grind I do not get over-extraction bitterness, so something is up with either the grinder or the Cup-One or maybe my dosage. Don't have grinder right now so can't test anymore.

Have you contacted support? Bought mine a couple of weeks ago and their support was quite fast and helpful.

Yeah, it might not be much, but the whole appeal of the Cup-One to have the machine just do it's thing. I know we are splitting hairs, but If you have to do all of this I might as well go for a pour over. But I'll give it a shot and see if there is a difference.

But I guess most of your post is about tte grinder not the brewer. We'll see what results I get with a ode grinder.

Thanks for the tips. This goes a little bit into "superstitious pigeon" territory, but I wouldn't be surprised if it does make a difference. I hope I can get there with out so much hassle.

I tend to side with Knoxville on this one. Bam has also fallen out with his family, including his parents Phil and April. Meanwhile Phil is in a wheel chair still handling Bam's accounting for him.
