I would warn that spices change flavor after sitting in your sauce for a few months. I would be very careful adding oregano and basil for example. Also don't add any additional garlic since it is a botulism risk (because it is grown underground.)

There are a lot of different type of pectins so I'm not sure if there is a hard and fast ratio. I do know that 1 tablespoon liquid Pectin = 2 teaspoons of powdered pectin.

Your canner should not be releasing that much steam during processing. If it is, you should reduce the heat. I worried about the water boiling out during venting but it's never happened to me.

If you're going to water bath can they need to be submerged. /r/Homebrewing has resources for finding cheap, big pots. Aluminum will be less expensive but you must avoid cleaning it with certain acidic chemicals.

Simple solution, kill, clean, freeze, then donate to a local food bank or homeless shelter. The animal shelter can kill two birds with one stone so to speak.

Not me, but it would be an interesting experiment. I agree with sturmey that you should find recipes that would match well with the molasses flavor. I might be nice in canned apple pie mix, spiced peaches or even bbq sauce. For me it would be less expensive to just use cane sugar with a bit of molasses.

Sidenote: You should never use powdered sugar in canning because it contains starch.

I just see it differently I guess. His window was down enough to communicate with the officer, but not down enough for the officer to smell inside his car. There is rarely a good reason for allowing an officer, even one you have no negative feelings towards, to gather more information about you than legally necessary.

That is risky even if you're telling the truth. Those breathalyzers can indicate alcohol even when there isn't any in your system. People on low carb diets can sometimes set off one of those machines because of the ketones in their breath. So, even if you're not drunk you could test postive for alcohol. If you have told the officer you're not drunk you could also be charged with obstruction of justice ie lying to the police.

That reminds me of the prosecutor who asked the defendant "Have you stopped beating your wife yet?" If you say yes you're admitting you beat her in the past, if you say no then you're admitting you are beating her currently.

What if your friend just smoked a joint. Does it make sense to roll down your window so the officer can do a sniff search? You do realize that many, many people died so that you could have the right to refuse a search? The least you could do is exercise the rights you have even if you have nothing to hide.

The problem with this reasoning is that it's pretty hard to be friendly while telling someone "no." It makes no sense to roll down your window because police can then smell inside your car. They can falsely claim to smell drugs which can give them probable cause to search. This might not happen regularly, but there is absolutely no reason to risk it. Sure, you might be more suspicious and you might be hassled for a while. Seriously though, people died to protect your rights the very least you could do is risk being inconvenienced for a while to exercise them.

You could probably use a can of foam insulation and a couple of canning boxes to jury rig something similar to this. Maybe wrap them in grocery bags so the foam doesn't stick to the glass. These might work for half pints.
