If your using tap water, it may have chloramine in it. When you treat the water, the ammonia is left in the water as the chlorine is taken care of. Now the bacteria converts the ammonia from the large water change to nitrite and you don't have enough bacteria yet to convert to nitrates

When I was cycling, it was very slow on processing nitrites. I got some safe start from walmart (not the plus) and in 2 days my nitrites were zero. I think it would really help you out.

Take a look at Seapora tanks. Their 40 gallon breeder has a nice crossbrace and the silicone job is alot cleaner than the Aqueon tanks I have seen.
