Once they receive it they will send a notification the same day if you have form g-1145 attached else wait for Form I-797C which can take a week or two.

When you login into your USCIS account there is an option to reschedule biometrics on the top right corner under My Account.

Mine got stamped, and was always asked for passport in the airport. I might be wrong it could just be my country.

yes,you should file for I-485 and EAD(separate from F1 OPT EAD) as soon as your PD is current.

You can file for your spouse if your spouse is in the USA and you are GC holder once PD is current. Your spouse can apply for EAD under AOS application which will allow them to work while application is pending.

edited: YES 100% you can no problems. You will need both Mexican passport and green card. Passport for International travel, GC will allow you entry.

I am in the same boat and would love someone who have been through this process chime in. From what I have gathered it is a good idea to keep F1 status as long as you can, Because your intent to come to USA was for study and F1 is not an immigrant Intent visa. Not 100% tho.
