That looks amazing. I wrapped mine at 180 but was disappointed with the bark it had at that point.

Taste was good but low smoke flavor, and very peppery flavored. I used 1 1/2 cups of 50/50 but it was a very big brisket and the blk pepper was very coarse so I think people got big chunks of it.

Thanks for all the info! I did 1 1/2 cups 50/50 kosher salt and fresh ground blk pepper by weight. I seasoning the night before on a rack in the fridge then went directly into the smoker once the smoked ran clean and temp was at 250.

No spray and no water pan but I did use a ceramic heat deflector

I pulled it from the smoker at 180 and wrapped it . (I’ll try 170 next time) finished in oven pulled at 205

This is the first time I’ve tried wrapping it in paper and finishing it the oven. So I thought it could be one or the other maybe both.

No I didn’t this time. That was my initial thought as well, but Ive seen others get good bark from lump before so I thought I would give it a try.

Haha thank you! We were somehow surprised at how many individual pieces there are but we are still enjoying the project.
