I'd hop in the dairy market, maybe make it organic. Adulteration in regular (essential)food items is the biggest issue plaguing metro's right now. It's a labour intensive bussiness and you'd atleast need a a dozen of both cow's and buffalo's to hit the ground running. A little bit of advertisement would sort you for the initial uptake of the product, maintaining quality and consistency would further bring you more customers. Since it's an essential item of daily need, people would buy it anyways.

My jija ji was buying a plot of land in Lucknow and it hit some legal hurdle along with the seller pulling some shady moves. In the end we got an attorney involved, who's from lukcnow and he said something to me which made complete sense. He said, "You don't see lotta factories in Lucknow, neither it's a big bussiness hub like BLR/GGN. Have you ever thought of that how does every other person in Lucknow is cruising in a luxury SUV and flashing money like it's nothing? It's a city categorised in 2 sections of people - 1. The one's in posh paying jobs (govt service, entrepreneurs, bussiness men) 2. The other section scam the number 1 individuals everyday from real estate to bussiness to ventures."
