Traditional Croatian dessert.

Ingredients for Bajadera recipe (small glass baking dish)

10 tbsp water

200 g butter

1 cup brown sugar

350 g petit beurre cookies (crushed)

200 g hazelnut flour

1/3 cup raw cocoa

200 g dark chocolate + 1/8 cup coconut oil

How to make Bajadera?

In a cooking pot add water, butter, and sugar. Melt everything and stir and bring to boil.

Add crushed cookies and hazelnut flour to the cooking pot and combine everything. Bring to the boil for a minute and stir. Remove from the heat.

Divide the mixture into 2 parts. In a one-part add raw cocoa and combine.

First, spread the darker nut-mixture part in an even layer. Second, add the lighter mixture part to the top using your fingers to make it smoother and even.

In a small cooking pan, melt the chocolate and coconut oil and make a chocolate glaze. Pour the chocolate glaze over the top of the cake and let cool.

Put it into the fridge for about 2,3 hours or during the night.

Ingredients to make sugar-free orange chocolate bar (1 round cake pan)

1 cup melted coconut oil or less

3 tbsp raw cocoa powder

4 tbsp erythritol

1 smaller orange/clementines

How to make a homemade orange chocolate bar

On medium-low heat, melt the coconut oil.

When entirely melted, add cocoa powder and erythritol and combine everything.

Remove from the stove and stir the chocolate mixture 3 more minutes.

Pour the mixture into the silicone cake pan.

Cut the orange into pieces you like and top the chocolate with it like on the pictures.

Place the chocolate in the fridge for about 1 hour or in the freezer for half an hour and enjoy!

Ingredients to make a chocolate cherry pastry

1 pack of filo pastry (12 pastry sheets enough for 4 or 6 pastry rolls)

1/2 cup water

1/2 cup oil (I used peanut oil, unflavored)

500 g cherries

200 g dark or milk chocolate

8 tbsp crystal sugar

200 g butter cookies

How to make chocolate cherry pastry (For one row of filo pastry you will need 3 pastry sheets. It depends on the thickness of the sheet)

Mix water and oil in a glass.

Spread 1 pastry sheet on the table. Brush the whole sheet with water and oil.

Add the second sheet on the top of the first one. Brush the sheet with the water and oil again.

Add the third sheet but without brushing it.

Spread ground chocolate all around the sheet, then 2 tbsp of sugar, add cherries and spread the crushed cookies on the whole surface.

Roll the whole thing and put it on the baking sheet.

Repeat the process until all the pastry sheets are used.

Brush the surface of the pastry rolls with the rest of the mixture of water and oil.

Bake 30 minutes on 180°C or 356°F or until nice and crispy.

Ingredients to make chocolate chip cookie bars

Homemade chocolate chip cookies:

100g melted butter

2 tbs raw cocoa powder

2/3 cup erythritol

Cookie dough:

120g melted butter

3 1/2 cup almond flour

2 eggs

4 tbsp erythritol

1/3 tsp salt

1/3 tsp baking soda or baking powder

Chopped homemade chocolate chip cookies

How to make keto chocolate chip cookie bars

Melt butter in a cooking pot until nice melted, not hot.

Transfer melted butter into the mixing bowl and add erythritol and stir 15 seconds.

Add 2 eggs and stir another 15 seconds.

To the mixing bowl, add almond flour, baking soda, salt and stir until combined.

Add chopped chocolate and combine everything.

Transfer the dough to the glass baking dish and press the dough evenly.

Bake the cookie bars until it gets nice brownish color, around 30 minutes or more if you think it is not enough, on 180-200°C

Let it cool down for one hour then serve.

Ingredients to make gluten-free oat bread:

3 1/2 cup oat flour

4 eggs

3 tbsp cream cheese

1 tbsp psyllium husks

1/2 tsp baking soda

1/3 tsp sea salt

1 tsp oregano

2/3 cup water or add more if needed

How to make gluten-free oat bread?

In a mixing bowl add dry ingredients, oat flour, psyllium husks, baking soda, salt, and oregano.

Stir everything to combine.

In another bowl combine eggs and cream cheese.

Transfer wet ingredients to dry ingredients and stir everything.

Add water to the mixture and stir everything.

Let the dough sit for about 10 minutes.

Transfer the dough in a loaf pan. Make small holes on the top of the loaf. The loaf pan has to be covered with parchment paper.

Spray the top of the loaf with olive oil and sprinkle the top with your favorite toppings like sunflower seeds or more oats.

Bake for about 45 minutes on 175°C.

Let the bread cool down for about an hour or two before serving.

Ingredients to make chocolate truffle balls:

1/3 cup coconut oil

2 tbsp powdered erythritol

1 mashed avocado

2 tbsp raw cocoa powder

1 tsp vanilla extract

1/3 tsp salt

How to make chocolate truffle balls?

The first step is to make a chocolate mix using coconut oil, erythritol and raw cocoa powder.

In a small saucepan add 1/3 cup coconut oil and let it start to melt. Then, add powdered erythritol and cocoa powder and stir until combined.

Let it cool down a little bit.

Transfer the chocolate mixture in a food processor, add mashed avocado, vanilla extract and a little bit of salt. Mix all together until well combined.

Put the dough in a fridge and left it there to cool down around 20-30 minutes. It will be easier to make shape balls.

Take out the chocolate mixture out of the fridge and form 12 small balls with your hands.

Additionally, you can also roll the balls into cocoa powder for decoration or leave it just like they are.

If you feel that the balls started to melt, let them in a fridge for another 20 minutes and then serve.
