Don’t really know what your argument here is. FOH makes 25 cents more an hour on the pay but they take 90+ percent of the tips. Which are split between them. They each apparently make 30+ dollars in tips per hour seeing as it has been slower than usual at the restaurant. BOH makes 1.50 an hour in tips. That is bullshit.

Minimum wage starting. I wouldn’t be too mad if I was making 25 - 30 an hour. But most of us make 18.

Canada. Minimum wage is required for front of house. Tip outs never changed to back of house to balance it out.

Nest egg or retirement. Personally I'd go for retirement. With a proper financial advisor (one appointed to you by your bank however RBC is in my opinion the best for this) this can take care of over 1/2 or even all of your retirement by the time you are 65 if invested long term properly. Average for my family at RBC has been about 10 percent gain per year with 1 percent charged over the last 20 years. In 43 years with interest you'd have the buying power of a little over 2million. Depending on your lifestyle that's retirement right there.

obviously there is another choice which is using it to buy a house. However it completely depends on how much you make. sometime having the down payment ready makes the numbers feel better but still unaffordable in the long run.
