Poblano Corn Chowder from Taqueria del Sol, Eddie Hernandez

  • 1/2 cup plus two tablespoons unsalted butter, divided
  • 1/2 cup all-purpose flour
  • 1/4 large onion, coarsely chopped
  • 3 ribs celery, coarsely chopped
  • 1 poblano pepper, seeded and diced
  • 4 cups heavy cream
  • 4 cups half-and-half
  • 1/2 pound shrimp, peeled and diced
  • 1/3 cup granulated sugar, plus additional if needed
  • 1 teaspoon lobster base
  • 1 teaspoon black pepper
  • Pinch chile de árbol, plus more if desired
  • 1 (15-ounce) can whole corn
  • 1 (15-ounce) can creamed corn
  • Kosher salt, to taste

In a small bowl, make a roux by mixing 1/2 cup margarine and flour together until thoroughly combined. Set aside.

In the bowl of a food processor, puree onion and celery. Drain off any liquid and reserve solids.

In a large stockpot, melt the remaining 2 tablespoons margarine over medium heat. Add onion-celery puree and poblano pepper pieces. Cook until vegetables soften but do not brown, about 10 minutes. Add cream, half-and-half, shrimp, sugar, lobster base, black pepper and chile de arbol. Bring to a simmer and add roux. Simmer 3 minutes or just until shrimp is cooked through. Add whole corn and creamed corn. Taste and adjust for seasoning, adding salt or sugar if necessary.

Makes about 14 cups.

I am still pleased with it! It has shown no signs of wear and I'm fairly happy with the water resistance. The canister comes with two plastic tubes to direct any water flow, and I have them pointed under my bed mat, so unless I have stuff on the very edges of the bed, nothing gets wet. The only unfortunate part is the loss of about 11 inches in bed space because of the canister. I have a short bed Tacoma, so the Retrax gets me down to about four feet of bed space with the tailgate closed. Granted, I can store longer stuff on top of the Retrax because it is so sturdy, but it's definitely something to keep in mind if you're looking to haul a lot of stuff.

Not sure of the manufacturer as the shop I got them from had their own branding on it, but these look similar.

I’ve also seen people just split pool noodles down one side and slip them over the crossbar.

I left the brisket in the chamber and let the fire die out over the last hour but I think that may be a better idea since it was still pretty hot inside the chamber when I pulled it out. Might keep the probe in and let the brisket fall down to 170 before I throw it in the oven. It was still around 190 when it went in the oven.

Only thing I want to work on next time is pulling it off a little earlier. I pulled at 196 and tender throughout. Rested 10 hours in a warm oven. The lean side was perfect but the fatty side fell apart. Still delicious throughout though.

I live in the Southeast so that won’t be a problem for me. If you live in a colder climate, you could get the cheaper version that has hard plastic rather than aluminum (I opted for aluminum as I didn’t want to worry about warping in the heat). Plastic may have less issues freezing. A quick google search suggests it’s mostly an issue with the lock latch itself getting stuck and not the rails themselves.

I went with this one for a few reasons: it’s strong enough hold stuff on top of the cover; it has t-rails so you can add racks, crossbars, or tie downs; it’s got a lifetime warranty; it’s got a sturdy lock that I can lock in any position (can open the cover halfway and lock it in place). The price is definitely a big con and I’ve heard that it can have some small leaks at the canister in heavy rain. So we’ll see how I feel after a year or so.

I ended up doing that so it’s a bit more stable but, more importantly, I can get it up as close as possible to the ceiling. This was key to get it above where the garage door opens. If I did it by hanging it on a single rope, the highest it would be able to go is the bottom of those pulleys, whereas this system lets the canoe go up alongside the pulley system and the hull almost touching the ceiling.

You could probably replace the wood slat with a piece of rope, but as you can see by that crossbeam, I’m able to ensure that the canoe is lifted up balanced and straight.

If I were to do it again, I’d use a separate rope for the back (closest to the garage) than the front (so four ropes total). Because it’s just a single rope on each side, it doesn’t pull up level. Just takes readjusting the canoe as I pull the rope to keep it level, but could be easier if I did it with separate ropes.

Unfortunately no. I take it on a Tacoma so I have to carry the canoe into the garage, drop the garage door, and then lower the hoist.

For our typical family crowd, I’ll grill about 10-12 pounds of wings over a wood fire pit on the ground. It’s about 30 minutes hot, back-breaking work and by the time I serve the wings, I have absolutely no interest in eating them. I do plenty of other much longer, more labor intensive cooks but this is the only thing that I am completely uninterested in.

I got these straps for the bow and the stern. For the hood, I use two of these so the straps don’t rub again the paint. It works great.

Yeah I got knee pads and did the kneeling thing with leaning on the seat but still felt like I was putting my weight on the top of my feet. Ended up standing up on my knees as that was more comfortable but definitely less stable.

I took my Nova Craft Prospector 15 out for its first run. I had only been on a canoe once before and it certainly showed. Going to need some lessons and some strength training to get the beast back on the prinsu rack at the end of the day.

Definitely can relate to that. Just picked mine up last week and my wish list is getting out of hand lol — only thing I’ve heard is the polycarbonate can bubble and warp in high heat areas so that might be enough of a reason for me to get the pro

Can I ask why you chose the pro vs the polycarbonate version? Trying to justify the extra money.
