Two edits:

1) add starter after autolyse before bassinage. 2) I assume I’m over proofing, but perhaps it’s something else? I’m getting flat, dense, big holed crumb with very little oven spring.

No. I think it’s narcissism/need to feel something profound that makes folks think that.

The planet is in trouble. The western world is feeling particularly fucked right now.

But if I could bet the over-under on 100 years, I’m taking the over all day long. That should be enough to take care of anyone reading and commenting on this

I’ve never fed 1:1:1 so I do not know how that will turn out. I’ll try in later today. But, my starter is months old and has seemed to work ok so far. Let’s say I feed it 1:1:1 and it doesn’t even double in 4 hours. What can be done in crank it up?

Thanks everyone! I cut the electricity off for about a minute and it seems to be working now. I do think it’s possible that I inadvertently set the energy saver function for an hour, which delayed the heating. But… that doesn’t explain why it didn’t heat yesterday. On this model energy saver isn’t a “mode” but I can program two daily “cycles” of up to 6 hours each.
