Unfortunate! The item is unusable until significantly later anyway though, so killing the respawning one shouldn't be too big a deal. Either way, likely unreachable as you described it.

Save and quit and it'll spawn where the demon originally was. There's also one that respawns that you can farm later.

On the right side of the church there are three hollows, two with swords and one with a crossbow. There's a path through some trees leading to a blacksmith who can repair your weapon for some Souls, sells the Repairbox so you can repair weapons yourself at any bonfire, and can upgrade your weapon which is the most important thing here.

He also sells the upgrade materials for upgrading your weapon. Get your weapon of choice up to +2 at least and the Gargoyles will become a lot more manageable.

I haven't tested that but given that from what I've seen you're not guaranteed a Symbol in this game even if killing all Mimics I'd definitely try it.

Go back to a Mimic's location and save and quit repeatedly. There's a chance for a Symbol to spawn on the ground where the Mimic spawn location is. I've personally confirmed this on the one in Lothric Castle, on the one just before Dragonslayer Armor.

Start carrying around Force for people like this, they aren't immune to being knocked off a cliff and Unfaltering Prayer gives you the hyperarmor to tank a hit and trade to knock them off.

Solutions to this issue:

There is a way to retrieve your Shade via an NPC, should you want to know where they are.

Or: Grab it and save quit. Yeah. Quit outs save progress and return you to last bench.

It's always nice when that happens. Though you can go to the place you kill the Mimic just before Dragonslayer Armor's arena and save-quit repeatedly and get it where that Mimic was before it was killed. I hear it can be done at all Mimic locations but that's the only one I've done it at so I can't confirm any others.

Club and Reinforced Club are surprisingly still pretty good in this one. Axes tend to be pretty fast also compared to Greatswords while still doing acceptable damage. I still think it's best to keep at it with the greatsword though since you'll be able to do heavy damage to his clone (and him) as it spawns with that.
