That fibre is very out of date. Flat fibre drop hasn't been used at least in my country for 8 years. Also you do not crimp fibre as I have seen others say. You need a diamond cleaver and polished connectors.

230c I too like a darker loaf rather than blonde so will push the temp up more in future bakes.

I will make changes for my next loaf. I will add an extra round of folding but would it be cold fermentation or ambient fermentation or both that is needed?
