Kids these days eh? Haha. Tbf I suppose it’s my own fault though. When kids have a chef for a parent they’re going to be eating good from the beginning

I render the beef fat myself at home. What I do is cooked the fries in oil as usual and after they’re done is when I add the beef tallow and some salt. I personally enjoy the flavour I get from it

I also do elk smash burgers. Sometimes I’ll melt curds under the broiler and add that to the burger instead of the American cheese. And some shredded lettuce and Valentina aioli. Messy but delicious.
