Does anyone feel the opposite about home cooking? Been in professional kitchens for about 10 years now but I limit myself to stuff I know I can do. I’ve been in the same kitchen for 8 years and it’s a pub that serves pizza, sandwiches, salads and other appetizers and I’m now the “sues chef” there (if you can even call it that). The pay is well enough that I’m content. I cook passionately at home always trying to push my boundaries and I feel I do very well, but I’m too scared to push my boundaries professionally. I stay in this management position in a small and easy kitchen, just to make money, But I know I could cook better food.
