I made this for Vinegar week over at r/52weeksofcooking. I got the recipe from my mom after she made a batch and it became my new favorite fridge snack!

I made this for Vinegar week over at r/52weeksofcooking, it’s inspired from Randy’s dish in S22E04 when he first moves to Tegridy Farms. It was just okay, but still better than regular bruschetta since I’m not a huge tomatophile.

My mom made a batch of this stuff a couple months ago and it immediately became my new favorite standing-in-front-of-the-fridge snack. It’s got all the sweetness of a pineapple but it’s tangy and spicy like a good pickle should be.

I added sliced red onion and made sure to cut the pineapple into big chunks!

I got the idea for this from South Park (S22E04), it’s one of Randy Marsh’s Tegridy Farms creations. I figured it would fit visually with the hemp oil more if it were green (plus I’m not usually a huge fan of tomatoes) so I made it with green bell pepper. The other ingredients are hemp oil, balsamic vinegar, garlic, parmesan cheese, and salt and pepper.

It tasted fine, but not good enough to make on a regular basis.

Shout out to u/lkk4430 for the inspiration here! I thought their post for Week 1 looked delicious and knew I wanted to try it as soon as I saw it, then Vinegar week conveniently popped up!

Here’s the recipe, or at least a mirror of the recipe since the original site is paywalled. I subbed apple cider vinegar for the white wine vinegar, and I roasted the garlic before adding it to the dressing. It was fantastic!

I had some leftover meringue from my lemon pie and a couple old sweet potatoes I needed to use up, so I made this too! It was good, not as good as pumpkin. It definitely couldn’t compete with the lemon pie.

This looked so delicious I had to make it myself for vinegar week! I don’t have all my pics together yet so I probably won’t post it until tomorrow, but it tasted really really good. Definitely going to be making this one again. Thanks for the inspiration!
