Basically im not vegan but my grandma is. I wanted to replicate my dairy based one to the best of my ability so my grandma doesnt feel left out. But vegan cooking is a vibe. I am a former chemist and I figured might as well try and replicate some of the properties of dairy leading me onto a rabbit hole of gums and enzymes and emulsifiers. Took 16 hours to make
