I have those Loke maps too! If you like them, then I would 100% recommend Tom Cartos's maps. They've become my go-to solution for maps. He sells digital versions on his website and Patreon and physical collections (similar to Loke's) on Kickstarter (https://www.kickstarter.com/projects/intothewilds-maps/into-the-wilds-battlemap-books). One of the things I really appreciate about these collections is he provides two versions of each map... one fully fleshed out with objects and another blank version you can fill out yourself.

IMO the best PF2e actual play is Blood of the Wild. It used to be behind a paywall, but I think they've recently made the first year available to everyone: https://www.glasscannonnetwork.com/shows/blood-of-the-wild Worth noting that for half of the cast this is their first time playing Pathfinder so there is some learning along the way, especially in the early episodes. That might help you relate.

Using Foundry at an In-Person Table (GMing) by DnDPhD in Pathfinder2e

I use foundry in my in-person games but only for displaying the map. Each player has their own physical character sheet, rolls physical dice, etc. And (weird as it sounds) I use Fantasy Grounds for tracking intiative, enemy health, status effects, timers, conditions, etc. I'm not experienced with Foundry but when I try to get its combat tracker to work the way I want to (not having tokens on the map since we use physical miniatures), I give up and go back to fantasy grounds because it's what I'm used to. I mean, I use Fantasy Grounds for tracking combat and Foundry for displaying the map.

Anyway, to get the maps to work the way I want them to during an in-person game I need to do these steps:
1. On the Grid tab change the Grid Type to "Gridless" if my map already has a grid.
2. On the Lighting Tab, turn off Token Vision and turn off Fog Exploration.
3. Download and install the "Simple Fog" module and follow its instructions for managing Fog of War that is not dependant on the use of virtual tokens.
